Ingredients
Makes 4 to 6 servings

1/4 Cup (1/2 Stick) Butter

Medium Onion, diced

1 Celery Rib, diced

1/2 Cup White Mushrooms, stemmed and chopped

1 Cup 7-Grain Mix
-
1 Granny Smith Apple, peeled, cored and diced

1/4 Teaspoon Ground Sage
-
1/8 Teaspoon Ground Nutmeg

1/2 Cup Thompson Seedless Select Raisins

1/2 Cup Raw English Walnuts, chopped

1 Large Chicken
Directions

Preheat oven to 350°F.

Melt butter in large saucepan over medium heat. Add onion, celery and mushroom and cook until onion is soft.

Add Seven Grain Mix and stir well. Cook until grains are lightly toasted, about 1 minute.

Add apple, sage, nutmeg, raisins, walnuts and 2 cups water. Bring to a boil, cover, reduce heat to low and cook until grains are cooked, about 40 minutes.

Rinse chicken well and pat dry before stuffing cavity with grain mixture.

Transfer to oven and roast for 45 to 60 minutes, or until chicken is cooked through.

Carve chicken and serve with stuffing on side.
