The mild flavor of turkey allows our Diced Sun-Dried Tomatoes to shine in this savory homemade sausage. The tomatoes and a bit of pork fat add moisture and richness, while the salty, tangy notes of Feta cheese add depth of flavor.

Blanch sun-dried tomatoes in boiling water for 30 seconds to bring out flavor and soften texture. Drain, then finely chop. Transfer to large bowl.
Add ground turkey, minced pork fat back, cheese and oregano. Stir to combine. Add beaten egg, salt and pepper and stir until thoroughly combined.
Place skillet over medium-high heat. Add rounded teaspoon turkey sausage to pan and cook, pressing with spatula to flatten into thick patty. When brown on bottom, flip and cook other side until cooked through. Remove skillet from heat, taste cooked sausage for seasoning and adjust seasoning of raw sausage with additional salt or pepper as necessary.
Divide sausage into 8 equal pieces and shape into thick patties. Cover and refrigerate at least 30 minutes (up to overnight) to allow flavors to blend and sausage to set.
Heat oil in skillet over medium-high heat and fry sausage patties until brown on both sides and cooked through.
