Our Tunisian spice blend makes a delicious cous cous salad reminiscent of the flavors of North Africa. The addition of marcona almonds,orange, and fresh tomato and radish gives it a fresh twist.

  • 1 Cup Cous Cous

  • 1/4 Cup Tunisian Couscous Seasoning

  • 1 Tablespoon Vegetable Oil

  • 1 1/4 Cups Vegetable Oil

  • 1/2 Cup Marcona Almonds

  • 1/2 Cup Radishes

  • 1/2 Cup Cherry Tomatoes

  • 2 Oranges

  • 3 Tablespoons Scallions, sliced thin

  • 1 Tablespoon Mint, chiffonade

  • 2 Tablespoons Extra Virgin Olive Oil

  • 3 Tablespoons Lemon Juice

  • 3 Tablespoons Reserved Orange Juice

  • 1 Tablespoon Red Wine Vinegar

  • Kosher Salt And Pepper, to taste


  1. Mix cous cous with 1 TBSP vegetable oil, salt, and tunisian spice blend in a small bowl. Stir very well so that all grains are coated with spice and oil.

  2. Heat water to a low boil,pour into cous cous, stirring well. Remove from heat, cover, and let sit for 10 minutes. Fluff with a fork.

  3. Lightly toast the marcona almonds in a 350F ove for 5 to 10 minutes. While roasting, wash and cut the cherry tomatoes in half, wash and slice the radishes into 1/8 inch pieces. Peel and section the oranges, reserving the juice.

  4. In a small bowl, mix the reserved orange juice, lemon juice, mint, red wine vinegar, and olive oil.

  5. In a medium bowl, toss the cooled cous cous, tomatoes, radishes, scallions and oranges. Mix in the dressing and season to taste. Garnish liberally with marcona almonds and some fresh mint leaves.
