  • 1/2 Cup Marcona Almonds

  • 1/2 Cup Radishes

  • 1/2 Cup Cherry Tomatoes

  • 2 Oranges

  • 3 Tablespoons Scallions, sliced thin

  • 1 Tablespoon Mint, chiffonade

  • 2 Tablespoons Extra Virgin Olive Oil

  • 3 Tablespoons Lemon Juice

  • 3 Tablespoons Reserved Orange Juice

  • 1 Tablespoon Red Wine Vinegar

  1. Mix couscous with 1 Tbsp vegetable oil, salt, and Tunisian Couscous Seasoning in a small bowl. Stir very well so that all grains are coated with spice and oil.

  4. In a small bowl, mix the reserved orange juice, lemon juice, mint, red wine vinegar, and olive oil.

  5. In a medium bowl, toss the cooled couscous, tomatoes, radishes, scallions and oranges. Mix in the dressing and season to taste. Garnish liberally with Marcona almonds and fresh mint leaves.
