Thai Red Curry Shrimp and Sauce

Serves 2

  • 4 Ounces Shrimp, peeled and cleaned

  • 2 Ounces Red Bell Pepper, chopped

  • 1 Ounce Thinly Sliced Carrots

  • 1 Ounce Sliced Mushroom

  • 1 Tablespoon Neutral Cooking Oil

  • 1 Cup Water Or Fish Broth

  • 1/3 Cup Thai Red Curry Starter

  • 2 Cups Cooked Jasmine Rice


  1. Place a medium non-stick skillet over medium-high heat and add the oil. When the oil begins to shimmer add the shrimps, cook for 1 minute per side then add the vegetables. Toss this once or twice cooking for 1-2 minutes.

  2. In a small bowl combine the liquid with the curry starter, whisking smooth.

  3. Pour this mixture over the vegetables and cook for 4 minutes until a slightly thick sauce is formed and the vegetables are lightly coated. Adjust sauce consistencywith more liquid as needed.

  4. Remove from the heat and serve with rice. Garnish with green onions or basil, and fresh limes.
