Ingredients

Serves 2

  • 4 Ounces Shrimp, peeled and cleaned

  • 2 Ounces Red Bell Pepper, chopped

  • 1 Ounce Thinly Sliced Carrots

  • 1 Ounce Sliced Mushroom

  • 1 Tablespoon Neutral Cooking Oil

  • 1 Cup Water Or Broth

  • 1/3 Cup Thai Coconut Red Curry Starter

  • Cooked Jasmine Rice

Directions

  1. Place a medium non-stick skillet over medium-high heat and add the oil. When the oil begins to shimmer add the shrimps, cook for 1 minute per side then add the vegetables. Toss this once or twice cooking for 1-2 minutes.

  2. In a small bowl combine the liquid with the curry starter, whisking smooth.

  3. Pour this mixture over the vegetables and cook for 4 minutes until a slightly thick sauce is formed and the vegetables are lightly coated.

  4. Remove from the heat and serve with rice. Garnish with green onions or basil, and fresh limes.
