Thai Green Coconut Curry with Tofu and Vegetables

  • 1/3 Cup Thai Green Curry Starter

  • 1 Cup Water

  • 1/2 Cup Carrots, bias cut

  • 1/2 Cup Broccoli Florets

  • 1 Cup Spinach Leaves

  • 1 Fluid Ounce Firm Tofu, small cubes

  • 1 Teaspoon Garlic, chopped fine

  • 1 Teaspoon Ginger, chopped fine

  • 1 Tablespoon Vegetable Oil

  • 2 Cups Thai Jasmine Rice, cooked


  1. Whisk the Thai green curry sauce starter with one cup of warm water. Keep aside to allow flavors to develop.

  2. Blanch the broccoli florets and carrots. In a large non stick skillet, heat the oil, then add the chopped garlic and ginger. Saute for one minute on low heat.

  3. Add the tofu, vegetables, and spinach, saute for one minute. Add the prepared Thai green coconut curry sauce. Stir well and continue to heat for another minute.

  4. Serve along side cooked Jasmine rice. It can be garnished with lime slices, Thai basil leaves, thin jalapeno slices, julienne tomato, lime wedges, or cilantro leaves.
