Serves 2

  • 2 Ounces Firm Tofu, cubed

  • 2 Ounces Peeled Sweet Potato, cubed and cooked

  • 1 Ounce Broccoli Florets

  • 1 Ounce Thinly Sliced Carrots

  • 1 Ounce Thinly Sliced Jalapeño Pepper

  • 1 Ounce Chopped Spinach

  • 1 Tablespoon Neutral Cooking Oil

  • 1 Cup Water Or Vegetable Broth

  • 1/3 Cup Thai Coconut Green Curry Starter

  • Cooked Jasmine Rice


  1. Place a medium non-stick skillet over medium-high heat and add the oil. When the oil begins to shimmer add the vegetables, cook for 1 minute then add the tofu. Toss this once or twice cooking for 1-2 minutes.

  2. In a small bowl combine the liquid with the curry starter, whisking smooth.

  3. Pour this mixture over the vegetables and simmer until a slightly thick sauce is formed and the vegetables are lightly coated.

  4. Remove from the heat and serve with rice. Garnish with cilantro, basil, hot chile flakes and limes.
