This flavorful Brown Bean recipe is an excellent example of the traditional Swedish dish Bruna Bönor, a sweetened bean dish typically served on Shrove Tuesday with smoked pork or Swedish potato sausage.

Place beans in large pot with water to cover by 2 inches. Soak at least 8 hours or overnight. Drain beans and add fresh water to cover. Cook until just tender, 1-1/2 to 2 hours. Use potato masher to smash some of beans.
Add vinegar, corn syrup, brown sugar and ground ginger to beans. Bring to a simmer, and cook another 30 minutes. Season to taste with salt and black pepper. Serve hot.
