Makes 2 cups
Add mango, garlic, ginger, orange zest, orange juice, cumin, coriander, vinegar, sugar, raisins and pinch of salt and pepper to medium saucepan. Bring to a boil, reduce heat to a low simmer, and cook until very thick, about 20 to 25 minutes.
Let mixture cool, and season with additional salt, if desired.
