Ingredients

Makes 12 to 16 servings

Directions

  1. Place beans in large bowl, and cover with water. Soak overnight.

  2. Melt butter in large pot over medium heat. Add ham, onion, carrot and celery and cook for 5 minutes, or until onions are translucent.

  3. Add beans, stock, tomato juice, potatoes and Worcestershire sauce. Bring to a boil, reduce heat and simmer for 1 hour.

  4. Add remaining ingredients, and continue to simmer for 1 more hour, or until beans are tender. Season to taste with salt and black pepper.
