Shrimp with Coconut Green Curry Rice

Makes 4 servings


  1. Combine Coconut Green Curry Rice and water in large saucepan, and bring to a boil. Reduce heat to medium-low, cover and simmer until rice is cooked and all liquid is absorbed, about 20 minutes. Remove from heat, and let stand 5 minutes. Fluff with fork, cover and keep warm until ready to serve.

  2. While rice cooks, preheat grill or grill pan to medium-high.

  3. Toss shrimp with 1 teaspoon olive oil, then toss with chili powder, coriander, salt and black pepper.

  4. Thread 3 shrimp onto each of 4 skewers. Place on grill until cooked through, about 1-1/2 to 2 minutes per side.

  5. Transfer Coconut Green Curry Rice to serving bowl, and top with shrimp. Serve immediately.
