Ingredients

1 1/2 Cups Broth Or Water

1/2 Pound Brussels Sprouts, cut in half

1 Cup Raw Whole Almonds, toasted and chopped

2 Tablespoons Crumbled Goat Cheese

1 Tablespoon Olive Oil

3 Teaspoons Kosher Salt, divided

Fresh Chopped Parsley, garnish
Directions

Heat an oven to 400° F

Bring rice, 1 teaspoon of salt and water or stock to a boil. Cover, reduce heat to low and simmer about 15 minutes or until grains are tender.

Set aside.

Line a baking sheet with aluminum foil and spread the Brussels sprouts out into one layer. Sprinkle with olive oil and 2 teaspoons of kosher salt. Roast sprouts in the oven for 15 minutes.

Remove the pan and toss the sprouts to redistribute, roast again for 15 minutes or until golden brown.

In a medium mixing bowl combine rice and sprouts. Serve in a bowl and top with almonds, goat cheese and garnish with chopped fresh parsley.
