Pork Roast with Cuban Mojo Rice & Beans

  • 3 Pounds Boneless Pork Shoulder Roast, trimmed and trussed

  • 2 Cups Chicken Broth

  • 1 Large Onion, peeled and sliced

  • 4 Cloves Of Garlic, crushed

  • 1 Orange, juiced

  • 1 Teaspoon Honey

  • 1 Teaspoon Ground Cumin

  • 1 Teaspoon Salt

  • 1 Cup Organic Cuban Mojo Rice & Beans


  1. Heat an oven to 300° F

  2. Line a baking dish with the sliced onions and crushed garlic and place the roast on top. In a small bowl mix the orange juice, honey, cumin and salt. Brush this liberally over the pork. Place the pork in the oven and cook for 3 hours.

  3. Remove the pork from the pan to rest. Turn the oven to 450° F

  4. Strain the juices from the pan. Add 2 cups of the pan juice to a 1 quart pot, top with water if there is less. Bring this to a boil and add the Cuban Mojo Rice & Beans. Cover, reduce to a simmer and cook for 20 minutes.

  5. Return the pork to oven when it is ready and cook for 15 minutes, or until the rice is ready. After the 20-minute mark remove the pot from the heat and set aside to rest for 5 minutes. Do the same for the pork roast.

  6. Carve the pork and serve over the rice.
