Our Organic Grade AA Porcini Mushrooms are packed with rich, nutty aromas and deep, meaty flavors. Arborio Rice risotto is an ideal vehicle to showcase these decadent mushrooms.

Makes 6 servings
Place mushrooms in heatproof bowl. Cover with boiling water, and let soak until softened, 6 to 9 minutes, stirring frequently.
Remove mushrooms and coarsely chop. Strain soaking liquid through coffee filter into medium saucepan.
Add chicken broth to pan. Add fresh thyme and bring to a simmer over medium heat.
Melt 3 tablespoons butter in large saucepan over medium-high heat. Add onion and sauté until translucent. Add Arborio Rice and stir until rice is coated in butter and warmed through.
Add mushrooms and 1 cup mushroom liquid to onion and rice mixture. Cook, stirring frequently, until rice absorbs liquid. Continue stirring in mushroom liquid, 1 cup at a time, until rice produces creamy sauce and grains are tender.
Remove from heat and fold in remaining 3 tablespoons butter and Parmesan cheese. Add salt and pepper to taste before serving.
