  1. Place mushrooms in heatproof bowl. Cover with boiling water, and let soak until softened, 6 to 9 minutes, stirring frequently.

  2. Remove mushrooms and coarsely chop. Strain soaking liquid through coffee filter into medium saucepan.

  3. Add chicken broth to pan. Add fresh thyme and bring to a simmer over medium heat.

  4. Melt 3 tablespoons butter in large saucepan over medium-high heat. Add onion and sauté until translucent. Add Arborio Rice and stir until rice is coated in butter and warmed through.

  5. Add mushrooms and 1 cup mushroom liquid to onion and rice mixture. Cook, stirring frequently, until rice absorbs liquid. Continue stirring in mushroom liquid, 1 cup at a time, until rice produces creamy sauce and grains are tender.

  6. Remove from heat and fold in remaining 3 tablespoons butter and Parmesan cheese. Add salt and pepper to taste before serving.
