Serves 4-6

  • 1 Chicken , cut in half, breast bones removed

  • 1/2 Cup Piri Piri Sauce Starter

  • 1/2 Cup Warm Water

  • 1/2 Cup Olive Oil

  1. Stir together ½ cup Piri Piri Sauce Starter with ½ cup warm water and let stand for 5 minutes to “bloom” the dry ingredients. Add ½ cup olive oil to the sauce starter paste and blend in a mini food processor or with a hand held stick blender until smooth.

  2. Place chicken thighs in a sturdy zip lock plastic bag and cover with the prepared Piri Piri Sauce Starter.

  3. Allow this to marinade for up to 12 hours.

  4. Cook chicken over a hot grill to 165° internal temperature and serve.

  5. Excess marinade can be brought to a boil and served as extra sauce.
