Pink Beans and Rice
This simple side dish embodies homey rusticity, with a combination of our nutty long grain Brown Rice and meaty Pink Beans, cooked with a ham hock for extra richness. Serve it with braised, grilled, smoked or roasted meats for a complete meal.

Makes 4 servings
Heat oil in large Dutch oven and sauté onion, celery and peppers until softened.
Add bay leaf, ham hock, thyme, rice and beans and toss to incorporate.
Cover with broth, stir and cover. Let simmer on low heat, stirring every 20 minutes or so, until rice and beans are tender.
