This recipe is made for our Granulated Pineapple which is lightly coated with sugar, and the pineapple is also plump and juicy. Use this marmalade like any sweet preserve or pair it with meats and fish.

Ingredients
Makes 1 cup

1 Cup Granulated Pineapple

3/4 Cup Apple Juice

1 Tablespoon Rum

1 Teaspoon Lemon Juice

1 Teaspoon Cornstarch

1 Teaspoon Ginger Powder

1 Pinch Salt
Directions

Soak the pineapple in apple juice for 1 hour.

Cook the pineapple-juice mix in a small pot over a low heat.

Stir the rum, lemon juice, cornstarch, honey and ginger powder together in a small bowl to make slurry.

When the apple juice has reduced to a syrup consistency add the cornstarch slurry and stir continuously until the marmalade is thick and the cornstarch is cooked through. Set aside to cool and keep in covered containers in the refrigerator for up to 2 weeks.
