Lentil and Sausage Stew

Our gourmet lentil blend is an ideal combination of lentils for making soups, stews or purée for dips. This recipe utilizes fresh herbs, vegetables and a spicy chile pepper to bring lentil and sausage together in a hearty, delicious one pot meal.

Ingredients

Serves 6

  • 1 Tablespoon Olive Oil

  • 2 Medium Carrots, peeled and chopped

  • 1 Large Onion, peeled and chopped

  • 1 Large Parsnip, peeled and chopped

  • 4 Cloves Of Garlic, minced

  • 1 Bunch Of Collard Greens, rinsed and chopped

  • 1 Pound Smoked Sausage Or Kielbasa, cut into 1" chunks

  • 1 Cup Gourmet Lentil Blend

  • 4 Cups Broth Or Water

  • 2 Thyme Sprigs

  • 2 Rosemay Sprigs

  • 2 Sage Sprigs

  • 1 Whole Chipotle Morita Chiles

  • 1 Bay Leaf

  • Salt And Ground Black Pepper

Directions

  1. Place Dutch oven over medium heat and add the oil. Add the carrots and cook for 3 minutes. Add the onions, parsnips and garlic and cook for 3 minutes until very fragrant. Add the collard greens and sausage and cover. Cook this for 5 minutes, stirring once or twice.

  2. Use a piece of kitchen twine or cheesecloth to secure the herbs and the chile. Add this bundle along with the lentils and broth to the pot.

  3. Bring this stew to a boil and allow it simmer for 40-50 minutes uncovered. Season with salt and ground black pepper.
