Jamaican Jerk Shrimp and Mango Salsa with Caribbean Blend

Makes 4 servings

  • 2 Pounds Shelled Shrimp

  • 2 Tablespoons Canola Oil

  • 2 Tablespoons Jamaican Jerk Seasoning

  • 1 Mango

  • 1/2 Red Onion, diced small

  • 1 Tomato, diced small

  • 2 Green Onions, minced

  • 1 Lime, juiced

  • 1 Teaspoon Honey

  • 1 Cup Organic Caribbean Blend

  • 1 1/2 Cups Stock Or Water

  • 1 Tablespoon Olive Oil


  1. Peel and dice the mango. Toss the mango, red onion, tomato and green onions together in a small bowl.

  2. Stir together the olive oil, honey, lime juice and 1 tablespoon of Jamaican Jerk Seasoning in a separate small bowl. Pour the vinaigrette over the mango and vegetables, gently stir until coated. Cover this and set aside.

  3. Preheat grill to medium-high.

  4. Cook Organic Caribbean Blend according to package instructions.

  5. Toss shrimp with canola oil. Sprinkle with Jamaican Jerk Seasoning and toss again to coat. Grill the shrimp until pink and opaque, about 6 minutes.

  6. Serve the shrimp with the cooked Organic Caribbean Blend and garnish with fresh mango salsa.
