Ingredients

Serves 2-4

  • 1 Cup Arugula

  • 1 Cup Baby Spinach

  • 1/2 Cup Broccoli Florets, blanched

  • 1/2 Cup Sugar Snap Peas, blanched

  • 1 Avocado, diced

  • 1 Green Apple, sliced

  • 1/2 Cup Organic Kaniwa

  • 1 Lemon, juiced

  • 1 1/2 Tablespoons Honey

  • 2 Tablespoons Extra Virgin Olive Oil

  • 2 Fresh Tarragon Sprigs, stems removed

  • 2 Parsley Sprigs, stems removed

  • 2 Cilantro Sprigs, stems removed

  • 1 Teaspoon Salt

  • Freshly Ground Black Peppercorns

Directions

  1. In a medium bowl whisk together the lemon juice and honey while slowly drizzling in the oil.

  2. Add the vegetables, greens,herbs and cooked kaniwa. Gently toss to coat everything and sprinkle with salt and grind fresh pepper on top.

  3. Toss again and serve immediately.
