  1. Pour 1-1/2 cups water in medium saucepan and bring to a simmer over low heat. Mix remaining 1/2 cup of water with cornstarch in small bowl until dissolved.

  2. Add Coconut Milk Powder and sugar to water, and whisk until sugar dissolves. Keep coconut milk at a low simmer or mixture can break. Add cornstarch slurry to saucepan and whisk until very thick.

  3. Pour mixture into two ramekins or bowls and chill in refrigerator for at least 4 hours.

  4. Garnish with shredded coconut and serve.
