Makes 2-1/2 cups

  • 3/4 Cup White Sugar

  • 3/4 Cup White Wine

  • 1/4 Cup Fresh Rosemary Leaves, chopped

  • 4 Sprigs Fresh Thyme

  • 1 Tablespoon Fresh Ginger, chopped

  • 2 Teaspoons Grains Of Paradise, lightly crushed

  • 2 Tablespoons High-Quality Aged Balsamic Vinegar

  • 1/2 Cup Water


  1. Combine all ingredients in small saucepan and bring to a boil over medium-high heat. Reduce heat to low, partially cover and let simmer for 10 minutes.

  2. Remove from heat. Taste and adjust seasoning and acidity, if needed.

  3. Let steep for 30 minutes. Strain through fine mesh strainer and discard solids. Refrigerate until ready to use.
