Our Appaloosa Beans, with their unique markings and pinto-like flavor and texture, are ideal for the classic dish Frijoles Borrachos, which translates to “drunken beans.” Cooked with onions, garlic, beer and bacon, these beans pack a punch of flavor. Serve them on their own with tortillas or tortilla chips, or as a side dish to grilled steak or chicken.

Place beans in large stock pot and add fresh water to cover by an inch. Boil for 30 minutes; drain. Return beans to pot.
Add beer to beans, and bring to a simmer for about 20 minutes.
Meanwhile, cook bacon in ungreased heavy skillet over medium heat until fat is rendered. Transfer bacon to paper towels to drain. Pour off all but 1 tablespoon bacon fat in pan.
Over medium heat, cook onion, garlic and chiles until softened and fragrant, about 5 to 7 minutes. Add cooked bacon.
Add mixture to cooked beans. Season to taste with salt and black pepper, adding more water if necessary to obtain desired consistency. Bring to a simmer, and cook for 10 minutes.
Spoon into individual bowls, and serve with lime wedges.
