Serves 2

  • 1 Organic Edamame Fettuccine

  • 1 Tablespoon Extra Virgin Olive Oil

  • 1 Cup Pistachios, toasted and finely chopped

  • 1 Clove Of Garlic, minced

  • 1 Sprig Of Fresh Thyme, leaves removed

  • 1 Tablespoon Butter

  • 1/2 Cup Chicken Stock

  • Salt And Ground Black Pepper, to taste

  • 2 Tablespoons Mascarpone Cheese

  • Freshly Grated Parmesan Cheese

  1. Add the pasta to a large pot of boiling water with a pinch of salt. Boil for 4-5 minutes to keep a chewy bite to the noodles. Strain and run cold water over the pasta to stop cooking.

  2. Place a large skillet over medium heat and add the oil, pistachios, and garlic. Cook while stirring for 2-3 minutes, then add the thyme and butter. When the butter begins to foam a bit, add the chicken stock. Cook until thick and glossy then add the pasta. Stir to coat and cover the noodles then transfer to 2 plates. Divide the pistachios between the two dishes. Place a scoop of mascarpone on top and garnish with fresh parmesan cheese.
