1 Pork Tenderloin
2 Tablespoons Cuban Mojo Spice Blend
1 Tablespoon Olive Oil
Place the pork, oil and Cuban Mojo Spice Blend in a large zip bag and squeeze out the excess air. Turn to thoroughly coat pork with oil and seasoning. Refrigerate 2 to 8 hours.
Heat a grill to a high temperature.
Place the pork on the grill and do not move it. Allow the pork to roast on the grill and get smoky. After 3 to 4 minutes, when the pork gives way, roll it over a quarter and repeat waiting.
Continue until all the sides of the pork are charred. Remove to a cutting board and cover with aluminum foil. Wait 8 minutes before cutting.
