Serves 8-10

  • 1/2 Pound Ground Pork

  • 1 Small Yellow Onion, diced

  • 1 Tablespoon Neutral Cooking Oil

  • 2 Tablespoons Chorizo Seasoning

  • 1 Teaspoon Kosher Sea Salt Flakes

  • 1 Pound Chihuahua Cheese, shredded

  • 1/2 Cup Chopped Tomatoes

  • 1/4 Cup Chopped Green Onions


  1. Preheat oven to 400°F.

  2. Place medium skillet over high heat and add oil. Add the ground pork and onions. Cook while breaking pork into small pieces with wooden spoon .

  3. Cook until the mixture begins to fry and brown a little.

  4. Add Chorizo Spice and salt to pork and continue cooking for 5 minutes more. Pour chorizo into 7-inch by 11-inch oven-safe serving dish. Cover chorizo with shredded cheese and place in oven.

  5. Bake for 5 to 6 minutes until cheese is melted and hot.

  6. Garnish top of fundido with diced tomatoes, green onions and cilantro. Serve with chips or bread.
