Smoky chipotle chiles paired with garlic and a splash of tangy vinegar add deliciously complex flavor to this gooey, melty, sliceable cheese. Our Toasted Chipotle Morita Chile Flakes add deep, rich and slightly spicy notes, especially after a quick re-hydrate in hot water to really bring out the flavor.

Spray the inside of a bread loaf pan and line with plastic wrap. Set aside.
In a small bowl or cup, sprinkle gelatin over vinegar and let sit for 1 minute. Meanwhile, place a small saucepan over medium heat and add evaporated milk, stirring frequently until milk comes to a simmer. Add the gelatin mixture and stir until melted.
Add cheese, chile flakes and granulated garlic to pan and whisk to combine. Reduce heat to low and continue to whisk until mixture is smooth and creamy.
Remove from heat and process with an immersion blender or food processor. Blend cheese for 30 seconds.
Pour mixture into prepared loaf pan. Fold overhanging plastic to cover, or cover with another plastic sheet. Transfer to refrigerator and allow to cool overnight.
When cheese has cooled, unmold from pan and remove plastic wrap. Use cheese slicing knife, vegetable peeler or very sharp knife to cut slices to desired thickness. Store cheese slices in a sealed container in refrigerator for up to 3 weeks.
