2 Cups Water
1 Cup White Sugar
1 Teaspoon Butterfly Pea Flower Powder
Combine sugar and water in 1-quart pot and bring to a boil. Simmer for 5-6 minutes until sugar is fully dissolved, then remove from heat to cool.
Add Butterfly Pea Flower Powder to steep in syrup.
When cooled, refrigerate syrup to chill for 1-2 hours.
Add syrup to clean, shallow bowl and place in freezer. Check syrup periodically and stir with fork. As syrup freezes, crystals will form on top and sides. Moving these crystals will form flaky ice that can then be covered and kept frozen for up to a week.
