  • 6 Fluid Ounces Stale Sourdough Or French Bread

  • 4 Granny Smith Apples, peeled, cored, diced

  • 4 Tablespoons Unsalted Butter

  • 1/3 Cup Onion, small dice

  • 1/2 Cup Celery, small dice

  • 2/3 Cup Chicken Stock

  • Granulated Bay Leaves

  • 1 Teaspoon Ground Sage

  • 1/2 Teaspoon Thyme

  • Kosher Salt

  • 1/2 Teaspoon Ground White Pepper


  1. Melt the butter in a large skillet, add the onion and celery, cook for 4 minutes until soft and translucent. Add the peeled diced granny apples, cook for another 4 minutes stirring often.

  2. Pre heat an oven to 350F. Cube the stale bread and add to a large mixing bowl. Add the sauteed onion, celery, chicken stock, seasonings, salt and pepper. Stir well.

  3. Butter an 8 quart baking dish, add the stuffing and bake for 40 to 50 minutes covered with foil, until piping hot. Serve with your favorite roast poultry.
