Makes 2 servings
2 Racks Pork Baby Back Ribs
1 1/2 Cups Ancho-Honey Citrus Spice
1 Gallon Water
1 Cup Bottled Barbecue Sauce
Rub ribs generously with Ancho-Honey Citrus Spice mixture, and wrap in plastic wrap. Refrigerate overnight.
Remove ribs from refrigerator and let sit at room temperature for 30 minutes.
Heat oven to 250°F and insert pan filled with water in bottom of oven.
Place ribs on wire rack, curved side down, on baking sheet, and cook for 2 to 3 hours or until meat is tender. If ribs are becoming too dark, turn them over once or twice while cooking. Ten minutes before ribs are done, brush with barbecue sauce.
