8-Bean and Green Bean Salad

Makes 8 servings

Directions

  1. Place 8-Bean Blend in large bowl and cover with water. Soak overnight.

  2. Place beans in large pot and add fresh water to cover beans by two inches. Bring to a boil over high heat, then reduce heat to medium and simmer for 1 to 1-1/2 hours, or until tender. Remove pot from heat and let cool. Drain beans, discarding liquid.

  3. Bring medium saucepan of salted water to a boil. Add green beans and cook until bright green and tender, 3 to 5 minutes. Drain green beans in colander.

  4. Whisk together lemon juice, olive oil, garlic and Mediterranean Oregano in medium bowl. Season to taste with salt and black pepper. Toss in red onion and stir until evenly coated.

  5. Drain beans and add to large bowl. Add green beans and dressing. Stir until combined. Season with more salt to taste.
