Spinach Florentine Risotto
In the culinary world, Florentine refers to a recipe that is prepared in the style of the Italian region of Florence, usually featuring spinach. In our Spinach Florentine Risotto, we’ve blended creamy Arborio rice with spinach, tarragon, parsley, garlic, onion, bell pepper, chiles and salt for a savory, ready-to-cook risotto which is delicious on its own or wonderful as a side.
Heat 1 quart water or chicken stock to simmer and reserve. Heat 1 tablespoon olive oil in large saucepan over medium heat. Add 1 cup Spinach Florentine Risotto and stir quickly until rice is well coated and opaque, about 2 minutes. Add 1 cup warm liquid to rice. Cook, stirring, until rice has absorbed liquid. Add remaining liquid 1 cup at a time, cooking and stirring until rice absorbs all the liquid after each addition and rice is tender but firm.

Risotto is an Italian culinary icon, particularly popular in Northern Italy where it is eaten with an endless array of ingredients. The secret to excellent risotto lies with the short-grain Arborio rice, the preferred risotto rice. Arborio is a high-starch, short-grain rice that absorbs cooking liquids to achieve a creamy overall texture with individual grains remaining pleasingly separate and al dente. Gently stirring the rice while gradually adding warm stock or broth draws the starch out of the rice grains and creates the creamy consistency and al dente texture fundamental to risotto.
Spinach Florentine Risotto tops the list of our favorite chef created products. Crispy bacon spiked cakes are one of many way to show off this delicious fusion of arborio rice, spinach and parmesan cheese.
