Romesco Sauce Starter

Add equal parts water and oil for a luxurious, ready-to-use sauce or base for soups, stews, marinades or dressings.

Stir together ½ cup sauce starter with ½ cup warm water and let stand for 5 minutes to “bloom” the dry ingredients.
Serve immediately or let flavors develop in the refrigerator and serve within 48 hours.
Can be served cold or at room temperature.
Optionally add ½ cups olive oil to the sauce starter paste and blend in a mini food processor or with a hand held stick blender until smooth.
Storage & handling

Romesco sauce is said to have originated in in the coastal city of Tarragona, Spain, in the 15th century. Originally served as an accompaniment to fish, the thick, ingredient-variable sauce can also be stirred into soups or stews, served with vegetables, and used as topping for pizza or toasted bread. While the recipe varies from region to region and even family to family, common ingredients include roasted red peppers, ground almonds, garlic, tomatoes, bread and oil. The ingredients are blended, traditionally using a pestle and mortar, much like Italian pesto.
