Green bananas, which are simply unripe yellow bananas, are used to make banana flour because their sugar content has not fully developed, giving the flour a very mild flavor that can easily replace wheat flour in recipes. Banana flour also makes a good stand-in for wheat flour thanks to its high resistant starch content, which enables cooks to use about 1/4 less banana flour in recipes that would normally use wheat flour.
