Suggested uses

Parboiled Organic Chinese Black Rice can be used for virtually anything regular white rice can be used for, both savory and sweet, for more eye-catching color and complimenting textures.

  • Basic prep

    Bring 1 cup rice and 1 3/4 cups water to boil in a pot over high heat. Cover, turn heat to low, and simmer until tender, about 25 minutes. Separate grains with a fork before serving.

    Organic rice

    Organic Chinese Black Rice, also known as the Emperor's Rice, is glutinous medium-grain rice, perfect for both sweet and savory dishes.

    This organic rice has rich, sweet flavor and a slightly sticky texture. It is black in color prior to cooking and imparts a beautiful shiny, indigo color after cooking.

    It is traditionally used in Taiwan and Mainland China as a dessert ingredient, however creative western chefs have incorporated this rice in main courses for striking plate presentations.

    Steamed rice has been through a special cooking process prior to milling, while in the paddy form, the rice is soaked and then steam cooked. The texture of the rice becomes firmer and less sticky. It is a much more durable and easier to cook.

    One thing to keep in mind when using black rice is that when cooked, the color becomes more purple than black and it stains anything that it is combined with making the overall color similar to indigo.

    Congee is a savory rice porridge that is a breakfast staple in China. Served with all manner of toppings and condiments, from cooked chicken or hard-boiled eggs to bamboo shoots, mushrooms and pickled vegetables.
