    The pine nut (also called "piñon" or sometimes "pinyon" in Spanish and "pignoli" in Italian) has played a role in the culinary traditions of cultures around the world for thousands of years. Anthropologists have found evidence that ancient peoples harvested the fragrant, nutrient-rich nuts of whichever variety pine tree was best adapted to their local environment going back as far as the Paleolithic era.

    Our Mediterranean Pine Nuts come from one of the oldest varieties of pine trees with edible nuts, the Mediterranean Stone Pine (Pinus pinea) which is well-adapted to growing in a region starting in southern France and east through Italy all the way through to the Middle East. Mediterranean Pine Nuts are noticeably longer and more slender than the varieties harvested in Asia, but smaller all around than the relatively large American or Mexican pine nuts typically labeled "Piñon Pine Nuts." Mediterranean Pine Nuts also tend to have a lighter color and a smoother texture than either Asian or American nuts.

    Mediterranean Pine Nuts are a key ingredient in many classic recipes, notably the famous pesto sauce of Genoa and as a garnish to chickpea hummus of Mediterranean cuisines.

    Mediterranean Pine Nuts are a rich source of many essential nutrients. They can be a significant source of protein and fiber. They also offer a variety of vitamins including vitamins A, B, C, D and E, as well as minerals like zinc, magnesium and iron.

    Our Mediterranean Pine Nuts are minimally processed. They are harvested every autumn when they've reached full maturity. They are given several months to dry out before they are cracked open and the pine nuts are collected. The raw nuts are then quickly packed without being roasted, toasted or salted, so they are ready to be used in recipes or eaten just as they are.
