Fine White Polenta
Fine White Polenta is finely ground white cornmeal, which in Italian cooking is typically prepared as a mush or porridge.
Bring 5 cups stock to boil. Slowly whisk in 1 cup polenta. Cook until thick, 3-5 minutes, then reduce heat and simmer until soft, 30-45 minutes. Stir occasionally to prevent scorching. Serve immediately.
For firmer polenta reduce stock to 4 cups. Pour into loaf pan and chill at least 2 hours before slicing and serving as desired.
Storage & handling
Store in a dry, cool place.
