Fine White Polenta
Fine White Polenta is finely ground white cornmeal, which in Italian cooking is typically prepared as a mush or porridge.
Bring 5 cups stock to boil. Slowly whisk in 1 cup polenta. Cook until thick, 3-5 minutes, then reduce heat and simmer until soft, 30-45 minutes. Stir occasionally to prevent scorching. Serve immediately.
For firmer polenta reduce stock to 4 cups. Pour into loaf pan and chill at least 2 hours before slicing and serving as desired.
Storage & handling
Store in a dry, cool place.
This side dish showcases the rich, earthy, buttery flavor of our Morel Mushrooms as well as the versatility of polenta. After cooking, the polenta is chilled, sliced, topped with butter and cheese and baked until slightly crispy, giving it a wonderful texture and presentation.
