Nora Chiles are native to Spain, making them an essential element in Spanish cuisine. Fat and round with a dark red, glossy flesh, these unique peppers are very mild in heat, with a smooth, earthy flavor. Often used to make paprika, these peppers are also referred to as “paprika peppers” or “pimiento choricero.”
Spanish cuisine focuses on rich flavors such as garlic, paprika and saffron, as opposed to the hot, spicy nature of Latin cuisine. Mild peppers like nora chiles are perfect complements to other traditionally used ingredients such as delicate seafood and earthy olive oils.
Flavored with mild Nora Chiles, salsa vizcaina is the best-known sauce in Basque cooking. It is frequently served with bacalao, or salt cod. However, it is equally delicious with baked fresh cod.
