An essential condiment in Argentinean cuisine, chimichurri is traditionally served as a topping and sauce for grilled meat. There are two main variations of the sauce: chimichurri verde (green) and chimichurri rojo (red). Classic chimichurri verde generally consists of olive oil, vinegar, parsley, oregano, garlic, onion, and red pepper, but other seasonings like thyme, basil, cilantro, lemon, or paprika are sometimes included. The second variation, chimichurri rojo, uses the same basic ingredients but includes tomato and red bell pepper.
