Chai Spiced Fonio Porridge

An aromatic blend of warm chai spices and ancient African grains, our Chai Spiced Fonio Porridge with teff is flecked with pistachios and naturally sweetened with honey, palm sugar and coconut milk. Known in West Africa as “the grain of life,” the history of Fonio’s cultivation is thought to date to 5,000 BC. Teff, a type of millet, is the world's smallest cereal grain. With endless possibilities for finishing, this hot breakfast cereal can be prepared on the stovetop or in the microwave in minutes.

    Suggested uses

  • Stir in Diced Dates, Dried Diced Mango or Diced Pineapple

  • Add Roasted Pumpkin Seeds, Black Chia Seeds or Natural Sliced Almonds

  • Finish with fresh banana, pomegranate arils, figs or your favorite fruit for an elegant, everyday breakfast

  • Basic prep

    Bring 2 cups of water to a boil. Using a whisk slowly add 1 cup Chai Spiced Fonio Porridge to the boiling water. Lower heat and simmer for 3 minutes, stirring constantly. Remove from heat, cover and let sit and additional 3 to 5 minutes. Stir well before serving.

    Storage & handling

    Store in a dry, cool place.

    Fonio has been cultivated across the dry savannas of West Africa for thousands of years. Once a staple grain across the continent, cultivation and consumption diminished as a result of colonization and globalization. Nevertheless, fonio remains a staple in certain regions of Mali, Burkina Faso, Guinea, and Nigeria. Each year West African farmers devote approximately 300,000 hectares to cultivating fonio, which supplies food to 3-4 million people. More recently, fonio has come to enjoy some popularity in the west thanks to the efforts of Senegalese chef Pierre Thiam, whose TED Talk on the subject has been viewed more than one million times.

    Fonio contains a good amount of dietary fiber, protein, minerals such as iron, calcium, magnesium and potassium, and vitamins such as folic acid and vitamin B3. Additionally, fonio is rich in methionine and cystine, amino acids vital to human health. It also gluten free, providing a unique alternative to couscous and rice

    Teff, a type of millet, is the world's smallest cereal grain. It is the seed of an annual grass native to Eritrea and Ethiopia and grows in both arid and tropical climates. Teff is high in dietary fiber and iron. It also contains a good amount of protein and calcium. It is similar in appearance, taste and texture to millet but is smaller and quicker cooking.
