Butternut Squash is a member of the Cucurbitaceae or gourd family, along with pumpkins, watermelon and cucumbers. It has a tan to light yellow skin and a rich orange flesh that is most often either roasted or boiled and tastes similar to pumpkin or sweet potato.
Butternut is now the most popular among the winter squash varieties, although it was not commonly eaten until the 19th century.
Butternut squash is naturally low in fat and sodium, as well as being a good source of fiber and vitamins A and C.
Butternut Squash Pieces make a great substitute for potatoes in this quick and easy hash with zesty Andouille sausage and our Aleppo-Style Chile Flakes.
