The word “broccoli” comes from the Italian plural of broccolo, meaning “cabbage sprout,” a nod to its origins in the Mediterranean. Ancient Etruscans bred it from cabbage. Its stout stalk and treelike branching structure most closely resembles cauliflower, which is a different cultivar group of the same species.
Broccoli has been a valuable food since the Roman Empire, but it didn’t gain popularity in the United States until the 1920s when Italian immigrants introduced it.
The broccoli plant consists of florets, stem and stalk with colors ranging from light to dark green. Because of these different components, broccoli provides complex tastes and textures, ranging from soft (the florets) to fibrous and crunchy (the stem and stalk).
