Black Japonica Rice
Black Japonica Rice is a blend of short grain black rice and medium grain mahogany rice. We source California-grown rice with a slightly nutty, almost mushroom-like flavor and a subtle, sweet spiciness.
Bring 1 cup rice and 2 1/4 cups unsalted water to a boil. Cover, reduce heat to low, and simmer for 20 to 25 minutes until rice is tender and water is absorbed. Fluff with fork before serving.
Black Japonica Rice has many qualities that have earned the nickname “forbidden rice”. It can be cooked and drained for pilafs or steamed to a more sticky consistency. The latter is key to this meatless loaf that is both healthy and hearty.
