Birria is a traditional Mexican meat stew typically made with goat meat, although it can also be made with beef, lamb, or other meats. The meat is typically marinated in a mixture of dried chilies, cumin, oregano, and other spices, then slow-cooked until tender and flavorful.

The origins of birria are unclear, but it is believed to have originated in the town of Cocula, located in the state of Jalisco. According to legend, the dish was created by a group of goat herders who needed a hearty meal after a long day of work. They combined the goat meat with local herbs and spices, then slow-cooked it over an open flame until it was tender and flavorful.

Birria has since become a beloved dish throughout Mexico and has spread to other parts of the world, including the United States. It is often served with corn tortillas, onions, cilantro, and a spicy salsa made with chilies and vinegar.

Birria has become increasing popular and is now enjoyed in many parts of the world, often in the form of tacos or quesadillas with tender, flavorful meat.
