Carefully sort beans and rinse thoroughly. Soak overnight in cold water. Rinse and place in a large pot and cover with fresh water. Bring to a boil for 3 minutes, then reduce heat and simmer, covered, for 2 hours, until beans are firm to tender. This bean blend produces foam, so skim the water regularly while cooking.
