Prunes are dried plums. There are a number of varieties of plums but not all are used to make prunes; prunes are made from a firm fleshed plum that has higher natural sugar and acid content than most plums. The extra sugar and acid allow the plums to be dried without fermenting. Plums are allowed to mature on the tree until fully ripe. They are then mechanically harvested and dried for up to 24 hours under strictly monitored conditions. No sulfites.
Dried fruits are very versatile. Use in baked goods, salads, sauces, stuffings, trail mixes, hot cereals, muffins, scones, fruit cakes and for homemade ice cream. Dried fruits may be eaten right out of the bas as a convenient and healthy snack, mixed with granola and almonds or in a trail mix.

There is no preparation needed for dried fruit. If used in baking, you may want to rehydrate. To rehydrate dried fruit, pour boiling water over the fruit and let sit covered for 5 to 10 minutes.
