Kamut® (Triticum Polonicum) is a non hybrid grain, a distant cousin of Durum Wheat. It looks like a large, pale grain of wheat. The history is interesting in 1949 a U.S. airman was given 36 kernels, said to have come from Egypt. He sent them to his family in Montana. There they grew the grain, but there was no market for it and the grain was forgotten. In 1978, one jar of the grain was rediscovered, christened Kamut® and it began to sell. Kamut® is less chewy than Wheat Berries which makes it a much better sub for grains like rice in casseroles, and stuffings. Kamut® has a buttery, wheat flavor and firm, chewy texture. Since it's a heirloom food, many people with wheat allergies use Kamut® instead of wheat. Kamut® has a large percentage of Bran and Endosperms which makes it very nutritious and also increases the cooking time of the grain.
Use Kamut® as you would Wheat Berries; in casseroles, pilaf, hot or cold salads. Grind into flour for breads and baked goods. For a quick, nutritious hot cereal grind coarsely, simmer with raisins and cinnamon then top with applesauce.
Kamut® brand wheat
Soak overnight. Cover with fresh water, and simmer 1 cup of kamut and 2 cups of water for 50-60 minutes until tender. If the kamut has not been soaked, simmer for 90 minutes. One cup dry yields 2-1/2 cups cooked.
