Peppercorns (Piper Nigrum) are one of the most commonly used spices; in fact, Peppercorn accounts for 1/4 of all of the global spice trade. The first documentation of Peppercorn use is found in South Asia, from the 4th B.C. Green Peppercorns are the berry of the plant Piper Nigrum and are harvested before they reach maturity. They are milder in flavor than white or black Peppercorns. The flavor of Green Peppercorns is milder than the Black Peppercorns and slightly sweet. These Peppers are freeze dried allowing them to be rehydrated to use in casseroles, soups, and stocks or ground and added to any recipe needed a Pepper flavor. Sun dried Green Peppercorns are referred to as Black Peppercorns.

Suggested Use:
Green Peppercorns can be rehydrated to use in casseroles, soups, and stocks. Green Peppercorns can be mixed with other Peppercorns for a complex blend. They can also be crushed, combined with butter and brushed on meat or vegetables before grilling. Green Peppercorns are also good in sauces served over rich game meats.

Basic Preparations:
To rehydrate, soak in hot water for 20 minutes and add to recipe. Use in casseroles, soups, and stocks or ground and added to any recipe needed a pepper flavor.
